Let’s see how my husband handles a meatless meal.
Breakfast! Spinach, onion, pepper, turkey, and cheese omelet. With coffee. Yum!
Which in itself makes me really proud since it’s march.
Obviously, this will not be a trend and I’ll be right back on the wagon tomorrow morning.

It’s like little bursts of awesomeness.
Spinach salad loaded with goodies:
Carrots, cherry tomatoes, edamame, been sprouts, grilled chicken, avocado, and strawberry poppyseed dressing.
Late dinner.
Spinach salad with tomatoes, carrots, bell peppers, celery, green beans, and, best of all, avocado.
So guess what I ate for a snack?
GUESS!
Green beans and hummus.

Yummy yummy in my tummy tummy.
Spinach and cherry tomato omelette.
Instead of the French toast my hubby is making.

I know I can do it. I’ve run more than 3 miles before. I’m just freaking out.
These might be my new favorite things! Emerald roasted almonds - and they come in all different flavors! These are dark chocolate flavored, but they had all different ones in Stop n Shop, and they come in little 100 calorie bags!

I just made the tastiest healthiest mini meal… BROCCOLI FRITTERS.
Here’s how ya do it.
Ingredients
- 3 cups chopped broccoli (1/4 inch cubes, steamed till tender)
- 1 egg (beaten)
- 1/2 cup flour (I used bread crumbs as a substitute)
- 1/3 cup parmasean cheese
- 1 small clove garlic
- 1/2 tsp salt
- Pinch of red pepper flakes
- 2 tbsp oil
Instructions
- Prepare, combine, and lightly mash ingredients. (except the oil)
- Oil pan and put on moderate heat. (Flick with water to see if it’s ready… It’ll sizzle)
- Plop mixture into 3” rounds, lightly flatten with spatula
- Cook for 1-2 mins per side
- EAT!
